This zesty, creamy Mexican Dip is full of cheese and just a hint of fresh cilantro. Everybody loves this easy ranch based dip that is ready in minutes.
No matter if you are hosting or attending a party, everybody needs an easy dip recipe they can toss together for simple entertaining.
I think a good dip is one where your bowl is empty at the end of the night and the guests make various comments about how they should not be eating so much of it. I always figure the more comments I get about broken diets, the better the food. Sorry, guys!
For this Mexican Dip, I use a quality low fat sour cream to help keep the fat down a bit. The dip is so savory you won’t notice it at all.
I serve this one over and over again because it is a great crowd pleaser. Creamy sour cream mixed with cheese and zesty tomatoes combine beautifully with ranch and taco seasoning with a hint of fresh cilantro.
You can adapt this any which way you like. There are always sliced black olives, fresh green onions, different cheeses, different salsa options or even some minced fresh jalapenos for the wild at heart!

(I had a few extra bell peppers and enjoyed using them to serve the dip but they also make bell pepper shaped bowls if you want something easier!)

- 16oz low fat sour cream, I use Tillamook braand
- 1 packet powdered ranch mix
- 1.5 tsp. taco seasoning
- 10oz Rotel brand tomatoes drained, or 1 cup of your favorite salsa
- 2 Tbsp. minced cilantro
- 1 cup finely shredded cheddar cheese
- Combine all the ingredients and stir.
- Serve with tortilla chips.
- Refrigerate leftovers.
The Rotel tomatoes give a nice zing but are not spicy. Some people prefer to use a favorite brand of salsa instead. The salsa does not need to be drained.
